Add your bell peppers along with a pinch of salt to the skillet.When the pasta is a 2-3 minutes away from being al dente, add the broccoli to the pasta water. Start on your pasta – cook it in boiling, salted water according to package directions.When the oil is shimmering add the chicken breasts and cook on each side for 5-7 minutes. Drizzle a bit more oil into a large skillet over medium-high heat, just enough to coat the bottom of the pan.Allow the chicken to marinate for half an hour, or up to overnight, in the fridge. Mix into a marinade and work into chicken. Combine 3 tbsp of Cajun seasoning and 1 tbsp of olive oil.Here’s a Pinterest graphic before you go: Omit the chicken, or swap it for fake chicken or crispy baked tofu chunks. Replace the butter with vegan butter or olive oil. Our Vegan Version: Use unsweetened oat milk and vegan parmesan for the sauce (flour + olive oil for a roux to thicken).Mozzarella is good too, if you’d rather have a milder cheese. I’d even venture to say I prefer it! Try them both and see what you think.
